Pecan Crusted Rabbit Recipe

Ingredients

  • 1/2 c. Bread crumbs
  • 1 c. Pecan pcs
  •     Emeril"s Essence see * Note
  • 1/4 c. Creole mustard
  •     (or possibly whole grain mustard)
  • 4 x Rabbit tenderloins - (abt 3 ounce ea)
  • 1/4 c. Vegetable oil
  • 2 Tbsp. Extra virgin olive oil
  • 1/4 c. Minced onions
  • 1/4 c. Minced green onions
  • 1/4 c. Minced celery
  • 1/4 c. Minced green bell peppers
  • 2 Tbsp. Chopped seeded jalapeno peppers
  • 1 1/2 Tbsp. Chopped garlic
  • 2 Tbsp. Minced fresh basil
  • 2 tsp Minced fresh thyme
  • 2 tsp Minced fresh oregano
  • 2 x Bay leaves
  • 2 1/2 c. Peeled, seeded, minced tomatoes
  • 3 c. Chicken stock
  • 1 pch Cayenne pepper
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 4 Tbsp. Cool unsalted butter - (1/2 stick) cubed
