- Dash Worcestershire sauce
- sea salt and pepper to taste
- 1 cup Bearnaise sauce
- 1 cup Marchand DE Vin sauce
- Bearnaise Sauce:
- 1-1/2 pounds clarified butter
- 2 ounces shallots, minced
- 4 ounces tarragon white wine vinegar
- 1 tablespoon dried tarragon
- 1/2 teaspoon black peppercorns, crushed
- 6 egg yolks
- 1-1/2 tablespoons fresh tarragon, chopped
- Cayenne pepper to taste
- Salt to taste
- Fresh lemon juice to taste
- Marchand De Vin Sauce:
- 4 ounces (1 stick) butter
- 3 tablespoons flour
- 1/4 cup very finely minced lean baked (turkey) ham
- 1/2 cup finely minces green onion tops
- 3/4 cup mushrooms, finely chopped
- 4 tablespoons finely minced onion
- 4 tablespoons finely minced garlic
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne pepper
- 1 cup rich beef stock (veggie for me), made from soup bones
- 1/2 cup dry red wine
