Spiced Lentils With Cumin And Coriander-crusted Monkfish And Pomme Purée

Ingredients For the spiced lentils
  • 1 tbsp olive oil

  • 1 banana shallot, finely diced

  • 1 garlic clove, finely diced

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp dried chilli flakes

  • 75g/3oz leek, finely diced

  • 90g/3½oz carrots, peeled and finely diced

  • 250g/9oz puy lentils, washed and drained

  • 200ml/7fl oz red wine

  • 450ml/16fl oz chicken stock

  • salt and freshly ground black pepper

  • 4 tbsp finely chopped fresh coriander

For the pomme purée
  • 300g/11oz King Edward potatoes, peeled and cut into chunks

  • 50g/2oz butter

  • 110ml/4fl oz double cream

For the monkfish
  • 2 tsp cumin seeds

  • 2 tsp coriander seeds

  • 400g/14oz monkfish tails, trimmed

  • 2 tbsp olive oil

  • salt and freshly ground black pepper
