- Coffee Buttercream:

- 1 cup sugar
- 24 tablespoons (3 sticks or 1-1/2 cups) unsalted butter, softened
- 2 tablespoons instant espresso powder
- 2 tablespoons rum or brandy
- decorations youve chosen.
- Chestnut Chocolate Filling
- 2/3 cup heavy cream
- 6 large egg whites
- 1 2/3 cups sugar
- 1 3/4 cups (3 1/2 sticks) unsalted butter, cut into pieces, softened
- 1 teaspoon pure vanilla extract
- 1/3 cup chestnut cream
- 1/4 cup unsweetened cocoa powder
- 1/3 cup chestnut cream
- 1 tsp. salt
- Marzipan Mushrooms:
- 8 ounces almond paste
- 2 cups icing sugar
- 3 to 5 tablespoons light corn syrup
- Cocoa powder
- one 10 x 15 inch jelly-roll pan that has been buttered and lined with parchment paper and then buttered again
