  • bread), crusts trimmed and torn into pieces, soaked in 1/4 cup milk

  • 1 teaspoon kosher salt
  • 2 tablespoons heavy cream
  • 1 tablespoon finely chopped shallot or green onions (white part only)
  • 1 teaspoon minced garlic
  • 2 tablespoons sun-dried tomatoes, packed in oil, chopped (optional)
  • 1 tablespoon finely chopped capers
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons lemon zest
  • 1 tablespoon chopped fresh basil
  • 2 cups fresh bread crumbs of same bread as soaked
  • olive oil for frying
