  • 1/4 cup  finely chopped sweet onion
  • 2 Tbsp.  chopped fresh mint
  • 1 Tbsp.  lemon juice
  • 2 tsp.  olive oil
  • 3 cups  packaged mixed salad greens
  • 3   Greek pita flat breads
  • 6   short wooden skewers
  •   Cherry tomatoes, pitted nioise or Kalamata olives, fresh mint leaves
