- 1 cup (5 ounces) whole wheat flour
- 1/2 cup white or yellow cornmeal, preferably stone-ground, plus more for garnish
- 1/3 cup rolled oats, plus more for garnish
- 1/3 cup cooked and cooled brown rice
- Generous 1 1/2 teaspoons salt
- 3/4 teaspoon instant, fast-rising, or bread machine yeast
- 1/2 cup clover honey or other mild honey
- 1 1/4 cups ice water, plus more if needed
- Corn oil or other flavorless vegetable oil for coating dough top and baking pan
