  • 3 to 4 tablespoons unsalted butter, plus more if needed
  • 2 shallots, minced
  • 1/2 teaspoon dried Italian herbs
  • 1/2 cup Marsala wine
  • 1/2 cup homemade or low-sodium canned chicken stock
