- 2 oz. golden raisins
- 1 1/2 tsp. apple cider vinegar
- Zest and juice of 1/4 orange
- 1/2 cinnamon stick
- 2 Tbs. firmly packed light brown sugar
- 1/8 tsp. kosher salt
- 1/4 cup whole-grain mustard
- ; 8 slices country-style sourdough bread, cut 1/2 inch thick on the bias
- 8 oz. Camembert cheese, cut lengthwise into slices 1/4 inch thick
- 2 cups arugula
- 2 Tbs. extra-virgin olive oil
