Ingredients

For the pastry

  • 170 g plain flour
  • 85 g cold butter, diced
  • 1 egg
  • 1-2 tbsp cold water
For the filling

  • generous knob of butter
  • 2 leeks, chopped
  • 1 onion, sliced
  • 1/2 red peppers, sliced
  • 1/2 green peppers, sliced
  • 6 button mushrooms, sliced
  • 3 slices smoked back bacon, chopped
  • 4 eggs
  • 200 ml double cream
  • 1/2 tsp dried mixed herbs
  • a few sprigs fresh thyme, leaves only
  • salt and black pepper
  • 1 tomato, sliced
  • 100 g cheddar cheese, grated
