- 1/2 cup well stirred tahini
- 6 tablespoons warm water
- 1/4 cup fresh lemon juice
- 1/2 teaspoon salt
- 3 large carrots (preferably fat) or 4 medium (about 1 pound total)
- 1 1/2 English (seedless) cucumbers, scrubbed and unpeeled, ends trimmed and halved crosswise
- 6 (12-inch) lavash or tortilla wraps
- Special equipment: an adjustable blade slicer; a sharp vegetable peeler; 24 (10-inch) wooden skewers
