Veggie Pinwheels

Ingredients

  • 6 large red, yellow, or orange, bell peppers (or combination of each)
  • 1 garlic clove
  • 1 (15 ounce) can chickpeas, rinsed well and drained
  • 1/2 cup well stirred tahini
  • 6 tablespoons warm water
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon salt
  • 3 large carrots (preferably fat) or 4 medium (about 1 pound total)
  • 1 1/2 English (seedless) cucumbers, scrubbed and unpeeled, ends trimmed and halved crosswise
  • 6 (12-inch) lavash or tortilla wraps
  • Special equipment: an adjustable blade slicer; a sharp vegetable peeler; 24 (10-inch) wooden skewers
