- 1 bag (10 oz) prewashed spinach, tough stems removed, leaves coarsely chopped
- 1 box (12 oz) mafalda (mini lasagna) or broad egg noodles
- 2 tsp olive oil
- 2 Tbsp minced garlic
- 1 can (14.5 oz) diced tomatoes
- 1 can (14.5 oz) chicken broth
- 2 lemons
- 1 lb fresh salmon fillet, skin and bones removed (see Note), cut in paper-thin slivers
- Garnish: Parmesan cheese, shaved from a chunk with a vegetable peeler
