Pasta With Salmon And Spinach

Ingredients

  • 1 bag (10 oz) prewashed spinach, tough stems removed, leaves coarsely chopped
  • 1 box (12 oz) mafalda (mini lasagna) or broad egg noodles
  • 2 tsp olive oil
  • 2 Tbsp minced garlic
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) chicken broth
  • 2 lemons
  • 1 lb fresh salmon fillet, skin and bones removed (see Note), cut in paper-thin slivers
  • Garnish: Parmesan cheese, shaved from a chunk with a vegetable peeler
