Triticale Risotto

Ingredients

  • 2 cups  triticale berries* (farro)
  • 1 tablespoon  butter or margarine, melted
  • 1   butternut squash (2-1/2 lbs.), peeled, seeded and diced
  • 2 cans (14-1/2 oz. each)  chicken broth
  • 1/4 cup  water
  • 1 tablespoon  olive oil
  • 1-1/2 cups  chopped onions
  • 1 tablespoon  finely chopped garlic
  • 1/2 cup  white wine
  • 3/4 pound  Swiss chard, trimmed and leaves chopped (5-1/2 cups)
  • 1 teaspoon  chopped fresh thyme
  • 1/2 teaspoon  salt
  • 1/4 teaspoon  freshly ground pepper
  • 1/8 teaspoon  freshly ground nutmeg
  • 1/3 cup  freshly grated Parmesan cheese
  •   Freshly shaved** Parmesan cheese, for garnish (optional)
