Multi-bean Ragout

Ingredients

  • 2 tablespoons  olive oil
  • 5   carrots, cut into thin strips
  • 3   celery ribs, diced
  • 1   medium onion, sliced
  • 1 tablespoon  chopped garlic
  • 4 ounces  pancetta (or 4 slices bacon), chopped
  • 1 can (14-1/2 oz.)  chicken broth
  • 1 teaspoon  oregano
  • 1   bay leaf
  • 1/2 teaspoon  salt
  • 1/4 teaspoon  freshly ground pepper
  • 1 can (14-1/2 oz.)  plum tomatoes
  • 1/2 cup  red wine
  • 12 ounces  pappardelle or other wide noodles
  • 3/4 cup  freshly grated Parmesan cheese
