David's Red Chile Tamales

Ingredients

  • 36   dried cornhusks (about 8 inches long and 6 inches wide at the top)
  • 1 recipe  Shredded Beef and Pork (see Recipe Center)
  • 3 ounces  dried New Mexico peppers* (about 12 peppers)
  • 4 cloves  garlic
  • 1-1/2 teaspoons  salt
  • 1 teaspoon  dried oregano, crushed
  • 1/2 to 1 teaspoon  cayenne pepper (optional)
  • 1/4 cup  all-purpose flour
  • 3 tablespoons  cooking oil
  • 1 cup  shortening
  • 1/4 cup  lard or shortening
  • 4 cups  masa harina tortilla flour
  • 36   medium pitted green or ripe olives, halved
