Tex-mex Chicken 'n' Rice Casserole

Ingredients

  • 1 cup  chopped onion
  • 2 tablespoons  margarine, butter, or olive oil
  • 1 6.6-ounce package  regular chicken-flavored rice-vermicelli mix
  • 1 cup  long grain rice
  • 2 14-ounce cans  chicken broth
  • 2-1/2 cups  water
  • 4 cups  chopped cooked chicken or turkey
  • 4   medium tomatoes, chopped
  • 1 4-ounce can  diced green chili peppers, drained
  • 2 tablespoons  snipped fresh basil or 2 teaspoons dried basil, crushed
  • 1 tablespoon  chili powder
  • 1 teaspoon  cumin seed, crushed, or 1/4 teaspoon ground cumin
  • 18 to 1/4 teaspoon  pepper
  • 1 cup  shredded cheddar cheese (4 ounces)
