- 6 medium onions, thinly sliced
- 5 garlic cloves, 4 chopped and 1 smashed
- Salt and black pepper
- 2 sprigs of rosemary
- 1 fresh or dried bay leaf
- 1 tablespoon balsamic vinegar (eyeball it)
- 1/2 cup white wine
- 6 cups beef stock
- 1/2 pint grape tomatoes, halved
- 10 basil leaves, about 1/2 cup
- 4 thick slices crusty bread, cut about an inch thick
- 1/2 pound Gorgonzola cheese, cut into 4 slices
