1 cup milk
2 cups heavy cream
3/4-cup light brown sugar
1/2 vanilla bean, split
4 egg yolks
1/4-cup dark corn syrup

Carambola Pickles:
2 cups cider vinegar
4 cups sugar
2 tablespoons pickled ginger, sliced
1/4 teaspoon black peppercorns
3 star anise
1/2 teaspoon vanilla paste
Pinch saffron
8 carambola or star fruit, sliced thin
