  • 2/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons fresh lime juice (about 1 medium lime)
  • 1/4 cup roughly chopped fresh parsley
  • Salt and freshly cracked black pepper to taste
