Lemon Mousse

Ingredients

  • finely grated rind of 4 lemons and juice of three
  • 8 large eggs
  • 8 oz/250gms caster sugar
  • 1 1/2 (approx3/4oz/ 20gms) sachets powdered gelatine
  • 3/4 pint/450mls double cream whipped

Sauce (optional)

  • 1 1/2 lbs/750gms raspberries
  • 4 oz/100gms icing sugar more if you like a less sharp taste
