Beef Olives

Ingredients

  • 4 pieces of steak seasoned
  • plain flour
  • 1 tablespoon oil
  • 3/4 pint brown beef stock
  •  8oz finely diced carrot, celery and onion

 For the stuffing

  • 8 tablespoons fresh white breadcrumbs
  • 2 tablespoons chopped beef suet
  • 2 tablespoons fresh parsley grated
  • zest of 1 lemon
  • 1 beaten egg
  • salt and pepper to taste
