Ingredients
Croutons:
- 6 thick slices slightly stale French, Italian or other good bread cut into 1/2 inch cubes
- 3 tablespoons butter
- 3 tablespoons olive oil
- 1-3 garlic cloves
- small fresh rosemary sprig, or pinch of dried rosemary
Dressing:
- 3 anchovy fillets
- 2-3 garlic cloves
- 1/4 teaspoon sea salt
- 1/4 cup olive oil
- Juice of 1/2 a lemon
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 egg yolk
- 5 tablespoons freshly grated Parmesan or Romano cheese
- 1 tablespoon capers, drained and crushed
- 2 small or 1 large head of romaine lettuce
- Freshly ground pepper
