Pakora - Pakoda - Pakoras

Ingredients

batter-

  • 2 cups gram flour (ground chick peas)
  • 1 tablespoon fenugreek leaves or coriander (cilantro)
  • 1 teaspoon salt
  • 1/2 teaspoon chilli powder (easier to distribute evenly than chopped chillies)
  • 1 good teaspoon garam masala
  • 1 tablespoon of oil
  • water to form a thick, clinging batter -

vegetables to batter:

  • slices of: onion, raw potato (leave skins on if you like), florets of cauliflower and broccoli, paneer, aubergine, mange tout, baby corn...whatever you fancy really but nothing too watery like tomato I should imagine.
