Mango/Banana salsa:
- 1 clove garlic crushed and chopped
- 1 Spanish onion chopped
- Pinch of red pepper flakes (optional)
- 1 ripe mango flesh cut into small cubes
- 1 ripe banana cut into thin disks
- 1/4 kg medium-size shrimps shelled and deveined
- 1/2 cup chicken or fish stock
- 1 teaspoon apricot or peach jam
- handful of chopped mint or coriander leaves
- salt and pepper
