Ingredients

PASTRY:

• 4 oz plain flour
• Pinch of salt
• Rounded tsp of caster sugar
• 3 oz butter, fridge cold
• 1 egg yolk (keep white for filling)
• 1 tsp cold water

ALMOND FILLING:

• 2 egg whites
• 5 oz caster sugar
• 4 oz ground almonds
• 1 oz plain flour
• 3-4 drops almond essence
• Raspberry (or other) jam
• Flaked almonds to top
• A cupcake tray, either well buttered and dusted with flour, or use a silicone tray which is v useful
