Ingredients
PASTRY:
- 4 oz plain flour
- Pinch of salt
- Rounded tsp of caster sugar
- 3 oz butter, fridge cold
- 1 egg yolk (keep white for filling)
- 1 tsp cold water
ALMOND FILLING:
- 2 egg whites
- 5 oz caster sugar
- 4 oz ground almonds
- 1 oz plain flour
- 3-4 drops almond essence
- Raspberry (or other) jam
- Flaked almonds to top
- A cupcake tray, either well buttered and dusted with flour, or use a silicone tray which is v useful
