Ingredients

  • 2 potatoes, scraped or peeled & cut into bite-size chunks
  • ½ a small cauliflower broken into bite-size chunks
  • ½ an onion, finely chopped
  • ½ an onion, chopped into large chunks
  • ½ a green pepper, finely chopped
  • 2 tbsp tomato puree
  • 2" root ginger, grated
  • 4 cloves of garlic, sliced
  • 2 tsps curry powder
  • 2 tsps roasted ground cumin
  • 1 tsp chilli powder
  • 1 teaspoon turmeric
  • 1 tbsp worcestershire sauce
  • 1 or 2 tomatoes, sliced into fat crescents
  • 5 tbsps coriander leaves
  • Oil for frying
