Ingredients

1/2 cup White wine
2 tbsp Rice vinegar
2 tbsp Lime juice or more to taste
2 tbsp Light soy sauce
2 tbsp Minced fresh ginger
2 tsp Minced fresh garlic
1/2 cup 40% heavy cream
2 cups Cold butter, cut into small cubes (4 sticks)
2 pounds Salmon, tuna, swordfish, halibut, mahi mahi or sea bass
1 tbsp Olive oil
Salt
Ground pepper
