2 tbl Olive oil
2 slices Canadian bacon (2 ounces), chopped
1 Large onion, diced (about 2 cups)
4 stalks Celery, diced (about 1 cup)
4 cups Diced (1/2-inch) red-skinned potatoes (about 1 1/4 lbs)
2 1-lb Containers of frozen claims packed in their own juice, thawed, juice reserved
1 tsp Fresh thyme or 1/2 tsp dried
Salt and pepper to taste
