Salt & pepper, to taste
1 tbs. Unsalted butter
1/2 lb. Spinach, washed and stemmed
For the hollandaise sauce:
6 tbs. (3/4 sticks) unsalted butter, cut into 1/2-inch pieces
3 Egg yolks
1 tbs. Fresh lemon juice
1 tbs. White wine
1/8 tsp. Kosher salt
1/2 tsp. Tabasco
3/4 tsp. Curry powder
2 oz. Gouda cheese, cut into 2 slices
4 Poached eggs
