Polenta With Sausage & Collards

Ingredients

2 cups Rustic polenta 7 cups cold filtered or spring water
1 Bouillon cube (Rapunzel Sea Salt & Herb is nice)
2 tbs Unsalted butter
Sea salt and fresh ground black pepper
2 tablespoons Olive oil
1 pound (4 links) sweet Italian sausage
2 bunches Collard greens, washed, de-ribbed and chopped
1 Garlic clove, chopped
28-ounce Can chopped tomatoes with juice
1/4 cup Dried currants (or raisins)
2 tbs Balsamic vinegar
