Thai Tom Kha Soup

Ingredients

2 tbsp Canola oil
2 Med shallots, minced
1 Med white onion, sliced
3 Stems lemongrass, white parts only sliced thinly
3 tbsp Fish sauce, divided
2 cans Coconut milk
4 cups Chicken stock
1 lb Button mushrooms, 1/4 " sliced
1 lb. Chicken breasts, sliced as thin as possible across the grain
1 cups Bean sprouts (optional)
1-3 tbsp Red curry paste (use less for less spicy)
Juice of 3 limes
Garnish:
Sliced green onions, cilantro, jalepeno slices, lime wedges, crushed peanuts
