Ingredients
- 1lb ground beef
- 2 eggs, divided, 1 beaten
- 1 cup fine bread crumbs, divided
- 1T dried minced or grated fresh onion
- 1t worcestershire sauce
- about 2T tomato sauce(use ketchup if you'd like...I don't like :)
- about 3-4 cups mashed potatoes(left over is fine, as long as they are fairly plain... nothing fancy, needed. Heck, use the instant 100% tater flakes and whip up a quick batch, if you want! :)
- about 10oz fresh baby spinach, roughly torn
- 1 cup cooked black eyed peas(1can, drained)
- 2 cloves garlic, minced
- 3T bacon grease
- hot sauce
- Heinz Chili Sauce
- kosher or sea salt and fresh ground black pepper
- 12 soft, yeast dinner rolls, baked and sliced in half to make mini "buns"
