- 4 large eggs, preferably pasture-raised
- 4 ciabatta rolls
- lemon Vinaigrette: Yield about 2 cups
- 1 cup extra virgin olive oil
- 2/3 cup lemon juice
- 2 tbs finely chopped shallots
- 2 tsp kosher salt
- 1 sprig fresh rosemary
- parsley Vinaigrette:
- 2 tbs finely chopped shallots
- 1 tsp chopped capers
- 1 tbs extra virgin olive oil
- 1 tbs white wine
- 2 tsp white wine vinegar
- 1/4 tsp kosher salt
- 1/4 cup picked flat-lea parsley leaves
- pistachio Vinaigrette:
- 5 tbs roasted unsalted pistachio nuts
- 1/4 cup extra-virgin olive oil
- 2 tbs white wine vinegar
- 1 tbs chopped flat leaf parsley
- 1/2 tsp kosher salt
- freshly ground black pepper
