Ingredients
- 1 tbsp of olive oil
- 2 lb. chuck roast
- 1/2 teaspoon of salt
- 1/2 teaspoon of freshly ground pepper
- 1 medium onion, sliced in half moons as thin as possible
- 2 carrots sliced in 3 inch long sticks not too thin
- 1 red bell pepper cut in strips
- 3 garlic cloves chopped
- 1 28 oz. can of tomatoes in juice, drained and chopped
- 1 can of low sodium beef broth
- 1/2 teaspoon of oregano
- 1/4 cup of dry sherry
- generous pinch of cinnamon
- 1/4 teaspoon of cumin
- 1/2 cup of chopped pimento stuffed green olives
- 2 tablespoons of capers-drained

Some Of My Favorite Flavors Adapted To A Slow Cook Method. It Is A Great Meal To Come Home To After A Long Day At Work. Best Over A Saffron Rice.
