Cuban Pot Roast With Capers And Olives Recipe

Ingredients

  • 1 tbsp of olive oil
  • 2 lb. chuck roast
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of freshly ground pepper
  • 1 medium onion, sliced in half moons as thin as possible
  • 2 carrots sliced in 3 inch long sticks not too thin
  • 1 red bell pepper cut in strips
  • 3 garlic cloves chopped
  • 1 28 oz. can of tomatoes in juice, drained and chopped
  • 1 can of low sodium beef broth
  • 1/2 teaspoon of oregano
  • 1/4 cup of dry sherry
  • generous pinch of cinnamon
  • 1/4 teaspoon of cumin
  • 1/2 cup of chopped pimento stuffed green olives
  • 2 tablespoons of capers-drained

Some Of My Favorite Flavors Adapted To A Slow Cook Method. It Is A Great Meal To Come Home To After A Long Day At Work. Best Over A Saffron Rice.
