- ⢠2 lbs un-cooked chicken bones. Sorry but the KFC leftovers wonât do.
- ⢠¼ lb smoked bacon, lean as you can find.
- ⢠3 quarts non chlorinated water.
- ⢠1 - 2 medium onions, chopped, two is better.
- ⢠1 medium carrot, diced, optional. Depends on if youâre a cooked carrot fan.
- ⢠1 stalk celery, chopped.
- ⢠A few green (string) beans, cut into bits.
- ⢠2 â 4 cloves garlic, crushed.
- ⢠½ cup dry white wine.
- ⢠½ cup pale beer, optional.
- ⢠2 fresh, ripe tomatoes, Corse chopped.
- ⢠A small bunch of cilantro, chopped.
- ⢠1 tsp cumin.
- ⢠2 or 3 bay leaves, depending on size and freshness.
- ⢠1 tsp dried basil.
- ⢠2 â 3 whole cloves.
- ⢠1 tsp. Dried oregano.
- ⢠1 tsp. Chile powder.
- ⢠1 tsp. worcestershire sauce.
- ⢠2 tsp sea salt.
- ⢠FG pepper to taste.
