Fruit Compote Cake Recipe

Ingredients

  • dried fruit Compote (can make 2 days ahead)
  • At least 2 pounds of mixed dried fruit (cherries, cranberries, apricots, blueberries, whatever)
  • 2 cups boiling water
  • 1/2 cup orange juice (fresh is best)
  • 1/4 cup cognac or rum (can use less or eliminate)
  • 1/4 cup sugar
  • 2 cinnamon sticks (can use powdered 1/4 - 1/2 teaspoon)
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon vanilla OR 1 vanilla bean split
  • 2 cups boiling water
  • cake
  • 1 box yellow cake mix (white is OK)
  • 1/2 cup flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 stick butter, softened
  • 1/2 cup slivered almonds (optional)
