Ingredients
- 1 1/2 cups quinoa
- 2 1/2 cups salted water
- 1 398ml can of chickpeas, drained and rinsed
- 4 oz. feta cheese, cut into cubes
- 1 pint cherry tomatoes, washed and halved
- 1 small red onion, finely diced
- 1/2 sweet yellow pepper, chopped
- 1/2 sweet orange pepper, chopped
- 6 cups fresh baby spinach leaves
- 1 cup toasted sunflower seeds
- Dressing:
- 2 big cloves of fresh garlic, minced
- 1 tbsp. Dijon mustard
- 1 tsp. brown sugar
- 1/4 cup balsamic vinegar
- 1 cup olive oil
- pinch of salt
- fresh ground pepper

This Is A Really Nice Looking Salad That My Friend Diane Gave Me And It's Really Good For You. It Makes A Ton, So You May Want To Halve It! Lots Of Ingredients Going On.....the Sunflower Seeds Are My Favourite Part!
