Quintessential Quinoa Salad Recipe

Ingredients

  • 1 1/2 cups quinoa
  • 2 1/2 cups salted water
  • 1 398ml can of chickpeas, drained and rinsed
  • 4 oz. feta cheese, cut into cubes
  • 1 pint cherry tomatoes, washed and halved
  • 1 small red onion, finely diced
  • 1/2 sweet yellow pepper, chopped
  • 1/2 sweet orange pepper, chopped
  • 6 cups fresh baby spinach leaves
  • 1 cup toasted sunflower seeds
  • Dressing:
  • 2 big cloves of fresh garlic, minced
  • 1 tbsp. Dijon mustard
  • 1 tsp. brown sugar
  • 1/4 cup balsamic vinegar
  • 1 cup olive oil
  • pinch of salt
  • fresh ground pepper

Description

This Is A Really Nice Looking Salad That My Friend Diane Gave Me And It's Really Good For You. It Makes A Ton, So You May Want To Halve It! Lots Of Ingredients Going On.....the Sunflower Seeds Are My Favourite Part!
