Ingredients
- This is a dulce - dulce dish. And if you donât like or canât ferret up a rabbit then of course you may use chicken
- 2 young rabbits (jointed)
- carrot, celery and onion mirepoix (about 3 cups worth)
- 2 quarts of veal stock
- ---SWEET ONION SAUCE---
- 2 large vidalia onions
- 1 cup of red currants (or red raisons if need be)
- 4 tbls. of red currant jelly
- 1 cup of demi-glaze
- Half a cup of red sherry
- The juices from the rabbit
- ¼ lb of butter
- salt, black pepper
- ---SWEET bacon/chili corn MUFFINS aka the âTar Babyâ---
- This will yield much more than is required for this recipe, but the excess wonât last long.
- 1 cup of yellow cornmeal
- 1 cup of flour
- 1/4 cup of brown sugar
- 4 tsp. baking powder
- 1 egg
- 1/4 cup of vegetable oil
- 1 cup of buttermilk
- 1/3 cup of Southern Comfort
- 2 large fire roasted poblano chilies
- 1 cup of not overcooked and finely chopped bacon
- 4 tbls. of dark molasses
- 1 large sweet potato
- ---THE GREENS---
- 2 lbs of mustard greens (uncooked weight)
- 2 large carrots
- 1 lb. of turnips
- butter
- honey
- salt and pepper
