Tomato Soup Recipe

Ingredients

  • 1/4 cup olive oil
  • 1 medium onion, chopped medium
  • 3 medium garlic cloves minced or put through a garlic press (about 1 tablespoon)
  • pinch red pepper flakes
  • 1 bay leaf
  • 2 28 ounce cans whole tomatoes (I used 4 cans of 14.5 ounce diced tomatoes)
  • 3 slices high quality sandwich bread, crusts removed and torn into 1-inch pieces
  • 1 tablespoon brown sugar
  • 2 cups low-sodium chicken broth
  • 2 tablespoons brandy (optional)
  • salt and pepper to taste
  • 1/2 cup chopped chives
