Ingredients
- 2 kgs (8-10) chicken quarters, with 2 deep slits in each piece
- 200-300 g natural yogurt, whipped
- 120 mls lemon juice or malt vinegar
- 75 g ghee or butter or oil
- 1 tablespoon minced garlic
- 1 tablespoon peeled and grated or crushed ginger root (or ginger paste)
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon fresh-ground black pepper
- 2 teaspoons salt, or to taste
- vegetable oil, for brushing
- Fresh cilantro sprigs for garnish
- Slices of cucumber, red (Spanish) onion, tomato and lemon, for garnish
- * You can get ready made roasted or Tandoori chicken spice mix from any Indian or Pakistani grocery store.
- *You can increase the amount of species depending on the how much chicken meat u want to roast, but keep the proportion same as stated above.
