Fig Goat Cheese Prosciutto And Arugula Pizza Recipe

  • 1 small red onion, thinly sliced
  • 2 tablespoons olive oil
  • sugar, to taste (I used a few tablespoons)
  • 2 tablespoons balsamic vinegar
  • 1/4 cup madeira wine (or port)
  • 1 small sprig fresh rosemary
  • 1 small container fresh black Mission figs, stems removed and quartered
  • pinch of kosher salt

  • Toppings:
  • 8 oz fresh goat cheese
  • sliced prosciutto, about 8 slices
  • two generous handfuls of arugula, tossed with a little olive oil and aged balsamic vinegar

I Had Some Figs That Were Getting Really, Really Ripe So I Had To Use Them Soon. The Fig Spread On This Pizza Was The Perfect Way To Do So! The Creamy Goat Cheese, The Sweetness From The Fig Spread, The Saltiness From The Prosciutto, The Peppery Arugula..
