  • 3 oranges...halved
  • 1 Onion...Cut into thick slices
  • 5 cloves garlic...Crush it
  • 4...12oz pork chops...of the best quality you can find
  • ~ Rub ~
  • 1 Tablespoon coriander seeds...toast em' up
  • 1 Tablespoon fennel seeds...Same
  • 1 Tablespoon chili powder...test the brand and heat to your likin'
  • 1 Tablespoon paprika
  • 1 Tablespoon pepper
  • 2 teaspoons salt...Kosher
  • 1/4 Cup brown sugar
  • ~ Slaw ~
  • 4 granny smith apples...cored and julienned
  • 1 Cup Red Globe grapes,halved
  • 1/2 fresh lemon...Juice of
  • 1/2 Cup walnuts in pieces...nicely toasted
  • 3 green onions,finely chopped...top to bottom
  • 2 Tablespoon flat leaf parsley...chopped fine
  • Fresh ground sea salt,and black pepper
  • 3/4 Cup Creamy blue cheese dressing
