Azorean-style Pork Cutlets Recipe


  • 1-1/2 to 2 lbs pork loin (cut into 1/4" cutlets)
  • 2 cups white wine
  • 4-6 cloves garlic (chopped)
  • 2 tsp colorau (or regular paprika)
  • 2 Tbs olive oil
  • 2 small bay leaves
  • 1 Tbs pimenta moida (Portuguese fermented pepper paste)
  • 1/2 cup shallots (chopped)
  • 1 small red bell pepper, chopped
  • 1/3 cup parsley chopped
