Chicken -pumpkin -casserole Recipe

Ingredients

  • 2 - tablespoon s ( 30 ml) groundnut ...peanut oil
  • 4 - garlic cloves, halved and crushed
  • 1- ounce-( 25 gms) galangal..peeled and finely sliced
  • 2- chillies
  • 2- tablespoon ( 30 ml) kroeung
  • 1 -tablespoon( 15 ml) palm sugar
  • 12- chicken thighs
  • 2 - tablespoon ( 30 ml0 tuk prahoc
  • a handful of kaffir lime leaves
  • 2 - 1/2 cups ( 600 ml) coconut milk
  • 12 - ounces ( 350 gms) pumpkin flesh, seeded and cut into bite-sized chunks.
  • 1 - long aubergine ( eggplant)..quartered lengthways, and each quarter cut into 3
  • 4 ounces - ( 115 gms) long beans-trimmed and cut into 2 inch lengths
  • 3- tomatoes, skinned, quartered and seeded
  • 1 - handful spinach leaves washed and trimmed
  • a small bunch basil leaves
  • sea salt and ground black pepper
  • 1 - small bunch fresh coriander........stalks removed on all and coarsley chopped for garnish
  • 1 - small bunch cilantro
  • 1 - small bunch fresh mint
  • jasmine rice, to serve
