Ingredients
- The Red Sauce:
- 10-12 Large cloves garlic, unpeeled
- 2 large or 3 small pasilla chillies, for chili powder, or 2-3 tbs ground chili
- 2 lbs tomatoes, fresh or canned
- 4 tbs almonds or walnuts
- 2 tsp dried oregano
- 1 small red onion, thinly sliced
- 1 tbs corn oil or vegetable oil
- 3/4 tsp cocoa powder
- 1/2 tsp ground cinnamon
- Generous pinch of cloves
- 1 tsp chipotle puree
- salt
- red wine vinegar to taste
- The Chilaquiles Ingredients:
- 10-12 corn tortillas, stale or fresh
- 1/2 cup peanut oil, for frying
- 3 cups black bean chili (8 cup recipe below) Or use your own recipe
- 4 oz Monterey Jack or muenster cheese, grated
- 1 cup sour cream
- cilantro springs, for garnish
- salsa Picante (recipe below)
- tomatillo Sauce (recipe below)
- black bean chili Ingredients: Yields 8 cups
- 2 cups black turtle beans, soaked overnight
- 1 bay leaf
- 4 tsp cumin seeds
- 4 tsp paprika
- 1/2 tsp cayenne pepper
- 1 chili negro, or ancho chili, for chili powder, or 2-3 tbs chili powder
- 3 tbs corn oil or vegetable oil
- 3 medium yellow onions, diced into 1/4-inch squares
- 4 cloves garlic, coarsely chopped
- 1/2 tsp salt
- 1 1/2 lbs ripe or canned tomatoes, peeled, seeded, and chopped; juice reserved
- 1-2 tsp chopped chilpotle chili
- About 1 tbs rice wine vinegar
- 4 tbs cilantro, chopped
- Garnishes: 1/2-3/4 cup muenster cheese, grated
- Green chilies: 2 poblano or Anaheim, roasted peeled, and diced, or 2 oz canned green chilis, rinsed well and diced
- 1/2 cup creme fraiche or sour cream
- 6 sprigs cilantro
- salsa Picante Ingredients: Yields 2 1/2 cups
- 4 medium tomatoes (about 1 pound)
- 1/2 small red onion
- 2-4 tbs cilantro leaves, coarsely chopped
- 3 cloves garlic, roughly chopped
- 1-2 canned chipotle chilies or 1-2 serrano or jalapeno chilies
- salt
- rice wine vinegar to taste
- tomatillo Sauce Ingredients: Yields 1 1/2 cups
- 1 lb fresh tomatillos or canned
- 1/2 small red onion, finely chopped
- 1 clove garlic, finely chopped
- 2 serrano or other hot green chilies, seeded and finely chopped
- sugar, if necessary
- Mild vinegar to taste
- salt
