Ingredients
- Cupcakes:
- 6 tbsp cocoa powder
- 3/4 cup all purpose flour
- 1/4 cup sugar
- 1/2 cup brown sugar
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1/3 cup double espresso, cooled
- 1/2 cup buttermilk
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- Garnish: raspberries or strawberries, grated dark chocolate, mint leaves
- irish cream Frosting:
- 6 tablespoons (¾ stick) unsalted butter, room temperature
- 6 ounces mascarpone cheese (cream cheese may be substituted), room temperature
- +/- 1¾ cups confectionerâs sugar, sifted (may need a little more or less)
- 2 tablespoons irish cream liqueur
- 1-2 tablespoons grated dark chocolate
