Double Chocolate Espresso Cupcakes Recipe

Ingredients

  • Cupcakes:
  • 6 tbsp cocoa powder
  • 3/4 cup all purpose flour
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1/3 cup double espresso, cooled
  • 1/2 cup buttermilk
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • Garnish: raspberries or strawberries, grated dark chocolate, mint leaves
  • irish cream Frosting:
  • 6 tablespoons (¾ stick) unsalted butter, room temperature
  • 6 ounces mascarpone cheese (cream cheese may be substituted), room temperature
  • +/- 1¾ cups confectioner’s sugar, sifted (may need a little more or less)
  • 2 tablespoons irish cream liqueur
  • 1-2 tablespoons grated dark chocolate
