- 1 (12 - ounce) container firm tofu (you can use silken if you desire, I just buy firm tofu)
- 1/2 cup low-salt chicken broth
- 1 tablespoon cornstarch
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon oyster sauce*
- 2 teaspoons chili-garlic sauce*
- 2 tablespoons extra virgin olive oil or grapeseed oil, divided
- 8 ounces pork tenderloin, cut into 1 inch cubes
- 1 tablespoon fresh minced ginger root
- 3 cloves garlic, chopped
- 1 jalapeno pepper, seeded and chopped
- 1/3 cup sliced green onions (white and green parts)
- 1/2 cup edamame, thawed if frozen**
- 1 pound soba noodles, cooked according to package directions, or whole wheat angel hair pasta
- 1 teaspoon sesame seed oil
- 2 green onions, sliced thinly for garnish (optional)
Description
This Is A Family Favorite. High In Protein And Low In Fat. Drying The Tofu Out Between Layers Of Paper Towels Allows You To Fry It In The Hot Oil To Get A Nice Crisp Edge.
