Ingredients
- 2lbs boneless chicken, cooked and shredded(you can use left over chicken, here, no problem, as long as it's not overly seasoned. I tossed some BLSL thighs in the slow cooker with a lil stock, lime juice and hot sauce to "poach" and was very happy with the results)
- 1/2 stick butter, melted
- 1 cup hot wing sauce
- 8oz pepper jack cheese, shredded(I used half this and the other half was an amazing chipotle cheddar I recently stumbled on. SO good!)
- 12-15 4" corn tortillas(I used half plain and half chipotle corn tortillas, in which I put the chicken mixture and the chipotle cheese)
- diced tomatoes, for garnish
- diced avocado, for garnish
- avocado Dipping Sauce
- 1 ripe avocado, pitted and removed from skin
- juice from 2 limes
- 1/2 cup mayonnaise
- about 3T fresh cilantro
- kosher or sea salt and fresh ground pepper
