- 1 cup beef stock (preferably homemade), or beef consomme
- 2 to 3 sprigs fresh rosemary (optional)
- 2 to 3 sprigs fresh thyme (optional)
- 1 tablespoon tomato paste
- 1/2 teaspoon sugar
- 3 tablespoons unsalted butter, cold, cut into pieces
- salt and freshly ground black pepper, to taste
