  • ½ pound of Fiddlehead ferns well cleaned and rinsed
  • ½ cup ricotta cheese
  • ½ cup mozzarella cheese
  • ½ cup cheddar cheese
  • ½ teaspoon of hot pepper flakes
  • 1 tablespoon of oregano
  • 1 teaspoon of sea salt
  • fresh ground black pepper to taste
  • 1-cup brown rice
  • 2 tablespoons of olive oil
  • ¼ cup of red wine for deglazing pan
  • 1 egg slightly beaten
  • 2 cups mushroom stock
